This is a super simple recipe for moist and delicious corn bread. This basic corn bread is very lightly sweetened and goes extremely well with savory dishes like Spicy Chipotle Chili, Hearty Lentil Soup, White Bean & Corn Chili, or Mardi Gras Gumbo.

1 cup cornmeal
1 cup whole wheat flour
2 Tbsp flaxseed meal (ground flax seeds)
4 tsp baking powder
1 tsp salt
1 1/4 cup almond or soy milk
3 Tbsp maple syrup or agave nectar
3 Tbsp olive oil
Preheat oven to 425°
In a medium bowl, mix together cornmeal, flour, flaxseed meal, baking powder, and salt.
In a separate bowl, whisk together almond milk, maple syrup, and olive oil. Pour wet ingredients into dry and stir to combine.
Transfer to a lightly oiled 8 x 8 baking dish and bake for about 20 minutes, or until a knife inserted into the center comes out clean.
